Chocolate Chip Cookie Madness

I don't do a lot of things right in life. Let's face it, none of us ever really do.


We've got to many in's and outs to get it all right. Frankly perfect, and "right" is boring. I like the mistakes- I mean no, I don't but I do. Another weird "it makes sense in my head" moment for you there.


But I do know how to make a really, delicious (FLUFFY) Chocolate Chip Cookie. I'm kind of known for it. Seriously, my mom and sister jones for them. Dropping hints like "wow- you know what would be great on a day like today? Your cookies" (Insert my side eye here).


I've guarded my basic cookie recipe for years. I'm that proud of it.

I hope you all enjoy it. It's not complicated- like at all. It's stupid how simple it is, but when I tell you these cookies are- to die for. Yeah- that good.



Fluffy Chocolate Chip Cookies


Prep Time: 45minutes

Cook Time: 8-12 Minutes


Ingredients

2 sticks of unsalted butter at room temperature

¾ cup dark brown sugar

¾ cup granulated sugar

1 tsp vanilla extract

2 large eggs

2 ½ cups of flour

¾ tsp baking powder

1 tsp salt

2 cups semi-sweet chocolate chips



Directions:

1. Beat Butter, brown sugar and granulated sugar until pale and fluffy. Add vanilla extract and 2 eggs one at a time. Continue to beat until light and Fluffy.

2. In a separate bowl whisk together flour, baking soda and salt. Stir mixture into wet ingredients in two parts.

3. Stir in semi-sweet chocolate chips. Chill for 30-40 minutes.

4. Preheat oven to 350 degrees.

5. Roll dough into balls and arrange on baking sheet 1 inches apart. Bake 8-12 minutes. Let cool and serve.
