Grilled Cheese Comfort

Sometimes you just need a little comfort.


And it's been one of those weeks for me. From Anxiety to body aches to restless nights. It's just been that cycle. Comfort of some kind is warranted. So what's a Duchess to do? She goes default comfort mode: Grilled Cheese Sandwich.


There's something deliciously comforting about a Grilled cheese sandwich. Am I right? It's such a simple dish, but you can dress it up in multiple ways. Grilled Cheese can wear a fur coat or flip flops, but it never disappoints. I've got my all time favorite classic and simple American cheese cradled between two potato bread sliced grilled over hot melted butter. Sigh, just thinking about it brings me such joy. On a cold night grab a can of tomato soup, warm it up, add a dollop of sour cream and a healthy sprinkle of Shredded Cheddar cheese and settle in for the meca of comfort.


I've created some delicious, "Gourmet" Grilled Cheese Sandwiches, because we all need a little comfort, and dressing it up is just an extra treat. Enjoy my loves.



Bacon, Brie and Fig Grilled Cheese

Prep: 10 Minutes

Cook Time: 10 Minutes


Ingredients:

6 slices of Brie Cheese

3 slices of bacon (halves- and cooked to crispy delicious)

2 tbls Fig Preserve

Spreadable Butter

2 slices of Artisan Bread ( I used a Brioche style one)


Directions:

  1. Slather the front sides of your Bread with some spreadable butter. be as generous as you want with this, the more, honestly, the better. Assemble your sandwich by slapping on a good helping of Fig Preserve on each side of your bread slices. Then lay four slices of your Brie cheese on top of one side of your sandwich. Lay bacon slices over the. brie followed by the remaining two brie slices and your other slice of bread.

  2. In a pan over medium low heat, place your sandwich down and gently grill to golden brown flipping over and pressing down gently. If you have a pan press, feel free to use it. Slice on a diagonal and enjoy!


Gouda & Bacon Grilled Cheese

Prep: 10 Minutes

Cook Time: 10 Minutes


Ingredients:

6 slices of Gouda Cheese

3 slices of Bacon (halves- and cooked to crispy delicious)

Spreadable Butter

2 slices of Artisan Bread ( I used a Brioche style one)


Directions:

Same as above.






Plate up & immerse yourself in a little bougie comfort.
