Duchess Dishes

Did you get yourself some delicious Duchess Sazon? I thank you for your support and your purchase! I hope you truly enjoy the seasonings and I can't wait to see what bomb-ass delicious dishes you create with it!


I never thought I'd start selling anything. True Story. I really didn't set out to sell a product, or become my own boss (kind of right?), but I'll be honest and say I'm looking forward to seeing where this goes. I've always been hesitant to do my own thing. I have always made a plan, not necessarily on what others do but definitely more along the "this is what's expected, ergo you must eventually do" path. There are things that were expected, that were normal. But I've learned, with experience, that there is no path. There is no expectation, there is no mandatory list for success. What even is success? What's it mean for different people? That's something I've learned; you can't define the undefinable. Life is an abundance of different colors, tastes, flavors, breathes, emotions and experiences. Success isn't supposed to be measured.


So here's to success & a few recipes using my Sazon.


Bistec Encebollado

Prep Time: 10 Mins.

Cook Time: 40mins


Ingredients

2 pounds of Sirloin Steak (I like the Palomilla cut aka Beef round Steak)

2 Large White Onions (Sliced)

6 Garlic Cloves (minced)

1 cup of Beef Broth

2 tbsp Worcstershire sauce

2 tbsp Duchess Adobo (or Sofrito)

1/4 cup Distilled White Vinegar

2 tbsp Dried Oregano

1/4 cup Olive Oil

Salt

Pepper

1/2 tbls of Bacon Fat

Directions

  1. In a plastic bag or large bowl combine all ingredients with your Steak and give a good toss/ mix to combine.

  2. Refrigerate for 2 hours or up to a few days.

  3. When ready to cook, melt Bacon fat in Dutch oven or large Pot. Dump entire mix into the pot and cook on MEDIUM HIGH until it all comes to a boil. Once at a boil lower your heat to LOW and cover. Cook for about 40 minutes until meat is nice and tender.







Habichuelas Roja

Prep: 15 mins

Cook Time: 20 mins


Ingredients

1 Medium Onion (diced)

4 Garlic cloves (minced)

1/2 Large Red or Green Pepper (cut in halves)

1 tbls Canola Oil

3 tbls Duchess Sazon

2 tbls Tomato Paste

1 cup Beef Broth

1 cup Water

1 can Red Kidney Beans

1cup Fresh Cilantro


Directions

  1. In a Medium Saucepan over MEDIUM LOW, heat canola oil. Add 1 Duchess Sazon, Onions and garlic. Saute until onions are translucent.

  2. Add tomato paste, mix and allow to cook for about 1-2 minutes. Add 2 tbls Duchess Sazon, Mix and allow to cook down for another 2-3 mins. Add Beef Broth and the last tbls of Duchess Sazon. Add Salt and Pepper to taste.

  3. Allow to come to a soft boil. Add your beans, with the can liquid. DO NOT DRAIN. Allow to come to a soft boil again, add water. Allow to simmer , stirring occasionally for about 5 minutes.

  4. Add in Pepper slices. Bring to boil and add Vinegar. Allow to gently boil over LOW Heat for 10 minutes.

  5. Turn off heat and stir in cilantro.


Duchess Sazon Asparagus

Prep Time: 2 mins

Cook Time: 10 mins


Ingredients

1 bunch of Asparagus

2 tbls Duchess Sazon

1/2 Lemon Juice

1 tbls Olive Oil


Directions

  1. Blanch Asparagus. In a large pot Bring lightly salted water to boil. Once boiled drop in asparagus and cook until bright green, about 3-4 mins. Be careful not to overcook the asparagus. Go to just bright green and no further.

  2. In an Ice bath place your asparagus to shock freeze them. Doing this stops the asparagus from continuing to cook after removing from boiling water, but will ensure they keep the bright green color.

  3. in a medium deep sauce pan over medium heat, add olive oil and Duchess Sazon. Gently saute the Sazon, about 1 minute. Add your asparagus and cook for 5 minutes, until asparagus become just crispy and are heated through again. Squeeze Lemon juice over the top and serve.
